These Hatch Red Chile Ristra Wreaths are available fresh in New Mexico in the early middle of the chile season every year. Typically they are available fresh locally by Labor Day, which coincides with the Hatch Chile Festival. Red chile is the mature version of green chile, and takes a few weeks longer to fully mature. When they are fresh, they are quite heavy, can mold if left in a box, and also often harbor a lot of flies. Because of this, we let them dry out a few weeks in the sun before shipment. Expect us to begin shipping these ristras by the middle of September for the 2024 Hatch chile season! We will start shipping chile ristras across the continental US at that point in the chile season.
