Description

These chicos are made in Northern New Mexico with locally grown corn by farming families who have been doing it for generation. Chicos are very scarce, and we will often be sold out. We should be able to get some during the 2024 chile season, but how many we get really depends on the farmers and availability. Chicos are a great thing to use in New Mexican cooking, and can really kick up a lot of soups, and also add a great flavor to pinto beans. In case you would like to learn more about chicos, we have an article about them called Chicos Food. It has an overview about how chicos are made in the traditional New Mexican way, as well as an overview of how to cook them!

Chicos are roasted in a handmade horno like this before being sun dried!
