Guajillo chile is one of the most common chiles used in Mexican cuisine. It is very common to use this when making any kind of red sauce for enchiladas, tamales, mole or posole. With a medium heat level, this chile won’t really blow you away unless you mix it with other more spice chile, such as chile tepin, or chipotle. The guajillo chile is the dried form of chile mirasol, which is related to Pueblo chile. Mirasol means look at the sun, and these chile peppers grow upwards towards the sky, which is different from our Hatch chile in New Mexico, which hangs down.
