Bacon Bean Spice

As beans are a huge part of our New Mexican cuisine, we would be remiss if we didn’t include a great bean spice mix too! This one comes from our friends up at Adobe Milling in Dove Creek, Colorado! That’s where we get our Anasazi Beans and Bolita Beans too!  In my experience, it’s best to let beans soften about 80% of the final texture before adding any seasoning, and I would hold that to be the case with this mixture too! Cook your beans in pure water first, then add the seasoning when they are almost ready, but not quite done. This way, you don’t have salt and other things preventing them from softening, but also have enough time for the flavor to soak into the beans before you serve them! This spice mix also goes great with our new crop Estancia pinto beans!
