These beans are hugely popular in South America, particularly in Peru which has a lot of original landrace chile peppers that we will hopefully carry in the future! Also popular in Mexico, Mayocoba beans are a hearty bean that won’t get all mushy, but also doesn’t have a thick and annoying skin when eating. My recommendation for cooking them is the same as most dried beans, give them a soak for a few hours and boil them, checking for texture every so often.
